When this scenario applies
The customer says “300 grams, please” or “half a kilo”. Shortbread cookies, gingerbread, spit cake, bread, meringues by weight. There are no pieces or slices - there is a kilogram. In the example we make butter shortbread cookies; one recipe yields 2.4 kg.
A recipe in “Kilograms” mode
Select the “Kilograms” tile in the “The batch yields” section. The number of pieces field disappears - only “Batch weight (kg)” remains, meaning how much the finished bake weighs after baking. The pricing method is “Margin %” or “Price per kg”.
- Recipes, New. Name “Butter cookies”, category Small bakes, margin 45%.
- Select the “Kilograms” tile. Batch weight: 2.4.
- Ingredients for the whole batch: flour 1300 g, butter 650 g, powdered sugar 400 g, eggs 3 pcs, vanilla extract 5 g.
- A 3.5 kW oven for 0.5 h, packaging 3 PLN. Create the recipe.
Tip: Enter the weight AFTER baking, not the sum of the ingredients. Dough loses water in the oven, and the customer pays for what is on the scale. If you leave the field empty, the price per kg is calculated from the ingredient weight, without the baking loss - the recipe card then shows a warning. The same happens when the weight you enter does not match the ingredients (less than 60% or more than 105% of their weight).
What the recipe card shows
For a bake sold by weight, the pricing has one extra line: “Total cost / kg”. In the example the ingredients cost 42.89 PLN, and the total cost of the whole batch with the 40% fixed cost markup, the oven's electricity (2.10 PLN) and packaging is 65.14 PLN, which is 27.14 PLN per kilogram (65.14 PLN ÷ 2.4 kg). The price of the whole batch with a 45% margin is 65.14 PLN ÷ 0.55 = 118.44 PLN, which is 49.35 PLN per kilogram, and the margin on the whole batch is 53.29 PLN - 45% of the price. There is no price per piece block and no tray tiles - they make no sense with kilograms.
- Food cost / kg 16.92 PLN - the raw materials alone per kilogram (calculated from the ingredient weight, 2.535 kg)
- Total cost / kg 27.14 PLN - compare this with your price per kg
- Price per kg 49.35 PLN - a suggestion from the target margin, calculated from the weight after baking
- Margin per batch 53.29 PLN - from the whole 2.4 kg

A product sold by weight and the “1 kg” variant
The “Butter cookies” product with a price of 65 PLN (per kilogram), the recipe and the “Sold by weight” checkbox ticked. On the product card, add a “1 kg” variant: fixed price 65 PLN gross, VAT 8%, unit kg. In the variant's recipe, enter how many kilograms of the batch the variant uses: 1 of 2.4 kg. The variant cost comes out at 27.14 PLN net - that is what the kilogram you sell for 65 PLN gross costs you.
- Products, Add: name, category Small bakes, price 65, recipe “Butter cookies”, leave “Sold by weight” ticked.
- Product card, Add variant: label “1 kg”, price 65, VAT 8%, Gross, unit kg.
- Add the “Butter cookies” recipe and enter 1 in the “use … kg of 2.4 kg” field.
- Tick “Set as the product's default variant”, save.
Tip: When taking an order, the salesperson enters the quantity in kilograms (0.3 = 300 grams), and the price and cost are calculated in proportion to the “1 kg” variant.
Pitfalls
Two things specific to selling by weight.
- An empty “Batch weight” field = price per kg from the ingredient weight, without the baking loss. Always enter the real weight after baking.
- Older recipes may have a saved price per kg calculated from the sum of the ingredients. The recipe card then shows the price from the current costs, and the “Recalculate” button saves it.
