Raspberry purchase prices in Poland 2026: season summary

In the 2026 season, Polish buying stations paid from 9-12 PLN/kg for raspberries at the start (late June) to 17.50-19.50 PLN/kg for autumn raspberries at the end of September. The price rose for almost the whole season, because there was clearly less fruit than usual. Processors treat 20 PLN/kg as a limit they do not want to cross, even for the best grade.[6] Below are the prices from the following weeks, each with its date and source.

Industrial, grade I, extra

Extra grade means whole, dry fruit meant to be frozen whole. Grade I allows minor defects, and the industrial grade is fruit for purees, juices and jams, which is why it is the cheapest. In 2026 the difference between industrial and extra was usually 2-3 PLN/kg.

Why raspberries were expensive in 2026

Growers spoke of the fourth weak summer raspberry season in a row.[1] Several causes added up to the high price at once:

  • frosts in April (down to -10°C), then heat above 40°C in June and July[6]
  • yields in some regions at 30% of normal; a grower near Kraśnik picked about 5 tons per hectare instead of the expected 10[3][6]
  • according to the industry, buying stations took in roughly half of last year's volume[6]
  • lower supply of raspberries from Ukraine, which usually slows price growth[5]
  • in 2026 autumn raspberries ripened about three weeks later than usual, but their quality was better than the summer crop[6]
This season processors are not “fighting” for every ton of raspberries, and yet prices at buying stations almost matched the 2022 record. (sad24.pl, September 24, 2026)

Raspberry prices on Polish wholesale and local markets in 2026

A pastry shop rarely buys at a buying station. It usually buys on a wholesale market or from a wholesaler, and there dessert raspberries cost 20 to 50 PLN/kg in 2026, two to three times more than at the buying stations. In September, local markets in the Kujawsko-Pomorskie region recorded 28-55 PLN/kg.[8]

  • for comparison, on September 13, 2024 raspberries on wholesale markets cost 15-40 PLN/kg[12]
  • frozen raspberries from Ukraine (80% whole fruit) cost 21-22 PLN/kg delivered at the end of September 2026, more than Polish raspberries at the buying stations[6]

When raspberry buying starts

Buying of summer raspberries in Poland usually starts in the second half of June. In 2026 the first prices were announced on June 22, and most fruit reached the buying stations in July. Autumn raspberries (everbearing varieties) go to buying stations from August to October, and in 2026 their harvest was about three weeks late.[1][6] Prices are lowest at the start of the season, because processors wait to see the size of the crop, and they rise later, once it is clear how much fruit there really is.

Strawberry purchase prices in Poland 2026

The 2026 strawberry season was calmer than the raspberry one. In the first half of June prices fell as supply grew from the areas around Warka, Chynow and Grójec.[9] Buying stations differed clearly in their prices: the spread between buyers reached 1.00-1.50 PLN/kg, more than in previous years.[10]

Highbush blueberries: price per kg in Poland in 2026

Blueberries got cheaper in 2026, because Polish supply grows every year. At the end of July wholesale markets most often paid 15-16 PLN/kg, and buying stations paid less than 10 PLN/kg for blueberries for freezing.[7][11]

  • Bronisze (Jul 31): 15-16 PLN/kg[7]
  • WGRO Poznan (Jul 31): 15-22 PLN/kg[7]
  • Zjazdowa, Łódź (Jul 31): 12-18 PLN/kg loose[7]
  • Elizówka, Lublin (Jul 28): on average 17.50 PLN/kg[7]
  • blueberries for freezing at buying stations (Aug 3): 9.50 PLN/kg, a week earlier 10 PLN/kg; a year earlier about 8 PLN/kg[11]

Frozen fruit and the off-season

Pastry shops that make fruit tarts and cakes all year round need the cost of frozen fruit or fresh imported fruit. The ranges below are approximate wholesale prices in Poland from 2025. In 2026, after a weak raspberry season, it is worth assuming the top of these ranges.[13]

  • IQF (individually quick frozen) raspberries, grade I: 18-28 PLN/kg wholesale (10 kg bags)
  • IQF strawberries: 10-16 PLN/kg wholesale
  • IQF blueberries: 22-32 PLN/kg wholesale
  • frozen fruit puree for patisserie: 40-80 PLN/kg, the price depends more on the euro exchange rate than on the harvest
  • fresh raspberries in winter (imported from Morocco and Spain): several times more expensive than in season

What the raspberry price means for pastry shop costs

On a tart with 300 g of raspberries the difference is clear. At 25 PLN/kg (the lower Bronisze price in early September) the fruit costs 7.50 PLN, at 50 PLN/kg (top wholesale prices) it is already 15 PLN. So the same tart has a different cost in July, in September and in winter, when you reach for frozen fruit. A few rules that help:

  • buy frozen fruit in stock at the peak of the harvest, when prices are lowest
  • agree a whole-season deal with a grower: a fixed price and reliable quality
  • for premium tarts consider puree: consistent quality and a predictable price
  • do not mix fresh and frozen fruit in the same product, customers will notice the difference
  • recalculate recipe costs every month during the season, because prices change every week
  • treat seasonal raspberry products as a separate price category with a higher margin

How to calculate it in BakePilot

During the fruit season, costing “by eye” quickly fails. In BakePilot, software for pastry shops, the raspberry price from a purchase invoice goes into the ingredient database, and recipes and product cost calculations are based on the current price. The software can fetch invoices from wholesalers by itself from KSeF (Poland's National e-Invoicing System), and the invoice price scanner moves the prices into your ingredients. That way you see the margin on a tart at today's raspberry price, not at the price from six months ago.
